Every stage of Jinggeng Daofu’s production is carefully controlled, from sourcing organic rice to long-term maturation, ensuring balance, purity, and character.

Ingredient Sourcing
Jinggeng grows its rice in Wuchang, Heilongjiang, China’s most renowned region for organic rice cultivation. The region’s reputation is built on a unique combination of fertile dark soil, favourable climatic conditions, and advanced milling infrastructure designed to preserve grain integrity and flavour.
Wuchang’s Chernozem soil provides ideal conditions for organic rice farming. Soil Organic Matter (SOM) averages 4%, significantly higher than the global farmland average of 1.5%, supporting strong microbial activity and efficient nutrient cycling.
The region benefits from an average annual sunshine duration of 2,376 hours and a pronounced day–night temperature difference of 13–20 °C, enhancing photosynthesis efficiency and allowing rice plants to store higher levels of starch and aromatic compounds.
Tech-BIA Agricultural Management
Jinggeng utilises Tech-BIA (Technology Bio-Information Adjustment) to optimise soil health, crop growth, and environmental conditions. Through advanced bioinformatics, yeast is transformed into targeted bio-agents that replace synthetic fertilisers, soil conditioners, and plant protectants.
Integrated into Jinggeng’s farm management system, these bio-information products stimulate beneficial microorganisms, reinforce natural crop resistance, and uphold strict organic and sustainability standards.
Fermentation & Distillation
Fermentation and distillation take place at Jinggeng’s Faku production site, a purpose-built facility housing 119 traditional fermentation pits with an annual capacity of one million litres.
The process begins with a 28-day solid-state fermentation, significantly longer than industry norms. Using Jiuqu, a natural starter rich in yeast and enzymes, rice starch is slowly converted into alcohol and aromatic compounds. This extended fermentation allows for deeper ester development, reduced harsh volatile acids, and a fuller, more balanced flavour profile.
Distillation follows using a high-heat-cut technique, carefully designed to isolate the purest fractions of the spirit while minimising impurities. Independent laboratory testing from a recent random batch recorded a methanol content of just 0.152 g/L, approximately one-quarter of the industry standard. The result is a spirit defined by exceptional smoothness, clarity, and purity.
Trace amounts of methanol naturally occur in distilled spirits. Lower levels contribute to cleaner flavour, reduced harshness, and improved drinking comfort.

Maturation
Deep underground at Jinggeng’s Faku site, the spirit matures in an artificial cave designed to maintain a naturally stable environment. Temperatures are kept between 5–15 °C with 50–70% humidity year-round, creating ideal conditions for slow, controlled ageing while minimising energy use.
Jinggeng Daofu is matured for ten years in purple clay casks, selected for their natural porosity and chemical stability. Unlike conventional containers, these casks allow gentle micro-oxygenation, encouraging gradual oxidation and esterification without introducing harsh notes.
Over time, volatile compounds such as sulphides and aldehydes naturally break down or evaporate. The result is a spirit with enhanced aromatic complexity, refined texture, and a smooth, balanced finish that reflects patience, precision, and restraint.

Jinggeng maintains full oversight across cultivation, fermentation, distillation, and maturation to ensure consistency at scale. Traditional methods are supported by modern process management and quality monitoring, allowing each batch to meet the same standards of purity, balance, and character.
This integrated approach enables Jinggeng to combine craftsmanship with reliability, supporting long-term partnerships and international distribution.
